Carrot and Apple Mini Rice Treats

Ingredients

• 1 cup cooked white rice
• 1/2 cup grated carrots
• 1/2 cup unsweetened applesauce
• 1 egg
• 1 tablespoon olive oil
• 1/4 cup oat flour

Step-by-step instructions

1. Preheat your oven to 350°F (175°C).
2. In a large mixing bowl, combine the cooked white rice, grated carrots, unsweetened applesauce, egg, and olive oil. Mix well until all ingredients are evenly incorporated.
3. Gradually add the oat flour to the mixture, stirring until it forms a dough-like consistency.
4. Line a baking sheet with parchment paper. This will prevent the treats from sticking and make cleanup easier.
5. Using a small spoon or cookie scoop, portion out bite-sized pieces of the dough onto the prepared baking sheet.
6. Bake in the preheated oven for about 15-20 minutes or until the treats are firm and lightly golden. Baking at a moderate temperature helps preserve the nutritional quality of the ingredients.
7. Once done, remove from the oven and allow to cool completely before serving. Cooling allows the treats to firm up, making them easier to handle and store.
